Ingredients (serves 1)
- 2 protein atta rotis (made the night before or fresh)
- 75 g paneer, crumbled
- 1/2 onion, 1/2 tomato, 1 green chilli, chopped
- Pinch of turmeric, salt, 1 tsp oil
Steps
- Heat oil, sauté onion and chilli for 2 minutes.
- Add tomato, turmeric and salt; cook for 2 minutes.
- Add paneer and stir for 1–2 minutes.
- Warm the rotis, fill with bhurji, roll and wrap in foil for the commute.
Idea 2: Vegetable atta cheela (15 minutes)
Ingredients (makes 3)
- 3/4 cup protein atta
- About 3/4 cup water
- 2 tbsp each grated carrot, chopped onion, capsicum
- Ajwain, salt, chopped coriander
Steps
- Whisk atta and water into a smooth, pourable batter.
- Stir in vegetables and seasoning.
- Spread a ladleful on a hot, greased tawa.
- Cook both sides until golden. Serve with green chutney or curd.
Idea 3: Leftover roti upma-style stir fry (10 minutes)
Ingredients (serves 1)
- 2 leftover protein atta rotis, torn into small pieces
- 1 tsp oil, mustard seeds, curry leaves
- 1/2 onion, a handful of peas, 1 green chilli
- Pinch of turmeric, salt, lemon juice, 1 tbsp peanuts
Steps
- Heat oil, add mustard seeds and curry leaves.
- Add peanuts, onion, chilli and peas; cook 3 minutes.
- Add turmeric, salt and roti pieces; toss for 2 minutes.
- Finish with lemon juice. A great way to use last night's rotis.
Idea 4: Aloo-paneer paratha (weekend)

Idea 5: Sweet atta sheera (15 minutes)
Ingredients (serves 2)
- 1/3 cup protein atta
- 2 tbsp ghee
- 2–3 tbsp jaggery
- 1 cup hot milk or water; cardamom, chopped nuts
Steps
- Roast atta in ghee on low heat for 6–8 minutes until fragrant.
- Slowly pour in hot milk, stirring to avoid lumps.
- Add jaggery and cardamom; cook until thick.
- Top with nuts. A warming breakfast for children and elders.

On days when there is truly no time, a protein atta roti from dinner, rolled with a spoon of peanut chutney or curd and eaten with a glass of milk, is still a far better start than a packet of biscuits. Children can take the same roll in the school van.
